Plants vs Zombies was originally supposed to be a sequel/spinoff to Insaniquarium (another game PopCap made where you defend fish from aliens). It was called Weedlings and there is evidence of its existence from 2005 screenshots. Aliens remained as enemies, but instead of a fish tank you had a plot of land. You would water the ground first and THEN you would be able to place plants. There were turnips which would function in the same way as sunflowers, and you could also plant a cabbage-pult.
In 2006 I think the working title was "Lawn of the Dead". There the gameplay was closer to the final game but you could choose the same plant in the select screen multiple times. That was because much like conveyor levels in the final game, it would give you one time use cards, one by one, but in the order determined by what you chose.
After that early versions are very similar to the final game but most of the stuff was not implemented of course
