Warning, this this disables a security feature, make sure you know what you are doing. Just in case, disable it to play the game and when you are done just enable it again.
How to disable rootless:
1. Reboot mac
2. When the system is starting press CMD + R to enter recovery mode
3. Go to utilities -> Terminal
4. Type 'csrutil disable' without the quotes
5. Reboot
You can check it if it is enabled at any time typing on the terminal:
csrutil status
To enable it again, repeat the same steps as above but type 'csrutil enable' instead
If even after that it doesn't work, make sure you have installed xquartz (X11)
I tried, I chose the utilities option but from there I could not find anything that would have the word terminal on it or no place where you could write anything.
Well, they do state that it is compatible with Mac OS X Yosemite, since we are using "El Capitan" we are technically not supported. Apple has made a few changes in this last update, denying access to system folders and features even when you are on sudo su. That is why you have to disable csrutil on recovery system.
When you boot up on recovery, what do you see? what lies beneath utilities?

After installing it to your programs directory you start it once, it should have already Wine 1.8.0 as engine installed else you may install it or a newer version.
Use steam to get to the file location of Death Rally app and use Finder "Show Content" function to show it's content.
Start Wineskin app that you find there, choose Advanced, go to Tools tabulator and click on the "Update Wrapper" button. Wait until the program closed itself and start Wineskin again.
Choose Advanced, go to Tools tabulator and click on the "Change Engine Used" button, choose the Wine Engine that should be used (1.8.0 or something newer) and press ok.
After it is done changing the Engine you can close Wineskin window and start Death Rally.
Important now is that you don't verify integrity of game cache as else you've to do this again..
