I don't think Im having fun anymore.
Went Acolyte at the start, and chose Soldier for my 2nd class. Worked well for a while, ran into a couple of road blocks here and there (Kaern), but nothing too major.

Now, I have to kill heroics and I just...I don't know if it's my build, or if Acolyte is weak or what but, Ive been at Soul of the Phoenix for I dont know how long and she 2 shots me at level 88 while Im doing practically nothing. Is acolyte bad? Am I doing this wrong?

The only 2 I had any real difficulty with were Endless (I was forced to temporarily respec in order to equip the tortoise shield), and the Eldritch Council (One of the strikes in your scythe combo has a high reach, and kept accidentally smashing the crystals before I was ready to deal with the additional eldritch enemies that spawn).

Scythe isn't a very good weapon for bosses. The good news however is that you are building into Finesse from the looks of it, which means you also have access to Spear and Knives.

Some Heroics however are far too tricky(ier) to do, a prime example being Eldritch Inquisitor, which is basically a MASSIVE DPS Check, or Amulvaro and his Eldritch Jellyfishes.

Pretty sure Axes and Longswords are the highest dps atm. Light arrow if you're a dex build can help round out your damage. I did a scythe playthrough and essentially Light arrow carried me through.

I am also currently running a Deaths Acolyte with a Soldier Subclass. Out of all the playthrough's I have completed (Soldier, Sentinel, Wizard), the Deaths Acolyte has been my favourite by far. The scythe just feels more fluid and suits my playstyle more.

The Jelly Fishes should not really be a problem for any class/build, you can use the red orbs to insta kill them. If you pay attention to the orb it has 2 smaller spinning white orbs circling around it, if you hit the red orb then the white orbs stop moving and where they stop determines the orientation of the red energy beam that is produced. With a little practice it is really easy to split the screen in two and lure the jelly fish through the beam.

Problem is that when he brings out 3 of them and ONE Red Orb, if luck isn't with you, ALL THREE will not reach the red orb or the beam it spawns before it dissolves. And then you wind up with biorganic eldritch nuclear seeking missiles on your behind.

I cant say that I've struggled with that problem (though maybe I have just been lucky with the placement/timings), the red orb is on a delayed timer compared to the squid orbs, and so I position myself to lure the squids as close to the beams path before it spawns. So long as I've hit the orb to roughly split the screen through the centre (so that the squids have at most half a screen length to traverse, regardless of where they spawn), I find I have plenty of time to deal with the squids.

heroic phoenix rider is actually a bit overtuned for an early game heroic kinda like gaian heroic is aswell. her dmg seems a bit too high even for a heroic boss. it feels OFF somehow.
but her moves are all easy to avoid. final part is a dps check tough. you better have the dps to end the fight quickly. thankfully if you hit both at once she also takes double dmg.

so dont overthink this. some builds struggle more with certain bosses than others. thats just normal. and some of the lategame heroics are really really difficult and hardly worth beating (council comes to mind way too hard for what you get from her) and bysurge is another such case. same for heroic cusith. none of them offer rewards that match thier difficulty sadly.

Bysurge is easy if you remember to bring up the platform early. And the Magi Flame tome can make it even easier due to a certain AI exploit.
