Creating your own map for say or defult loading one in scenario editor should have tools to disable individual units somewhere. Only for that individual map
Like Derp Dolphin said, create your own map, can use a random seed map, and go to the TECH section, and locate the air ships and put them on the dissable list for all factions your going to fight. Or build up some anti-air towers, upgrade them, and build a air force. The air ships do not last long against a fleet of fighters.. Trust me on this.. I am either pounding the enemy with 15 air ships and shooting down the enemy air ships with a small squad of fighters..
