If you want to run around collecting things/doing sidequest stuff and dodging a main story I'd say AC: Odyssey or AC Black Flag, Ghost of Tsushima, The Spiderman and God of War games, The Mass Effect series, Fallout 3/New Vegas/4, Kingdom Come Deliverance 1/2, Elden Ring, Horizon Forbidden West, Cyberpunk 2077, Red Dead 1/2, Days Done, and the various Arkham games.

Is it specifically sandbox RPGs? Or wuxia stuff?

While not my cup of tea, Kenshin would probably fit the sandbox rpg, or something like Kingdom Come Deliverance, Dragon's Dogma, Elden Ring, Shadow of War, Tainted Grail or even Cyberpunk.

Wuxia got many games, but not many with great graphics in an open world. The most fitting would probably Black Myth: Wukong. Completly different style but wuxia/xianxia could be everything from Tale of Immortal over Wandering Sword to Warm Snow or House of Legacy.
