Worst part is they couldn't even be bothered to mention that with a single sentence on the store page. They just gutted the online, threw it up on the GOG store, and went about their day.

But i wonder if you could transfer the online files from the steam version and GOG be able to use it?
That's the whole point of the DRM-free version. It's rid of all that online-server-connecting-stuff and that's exactly how it's supposed to be.
For what reason do you buy games on gog?
It means only "no activation or online connection required to play." It never means it cannot have online/multi-player content.
For example, No Man's Sky is also on the GOG.com, and it has multi-player features.
