You can change the difficulty at any time during a playthrough to suit your desires at the time, so just mess around with the different settings and see what feels best for you. I spent a lot of time on Nemesis before I felt like I had a solid grasp on the mechanics, before switching over to Brutal.
Beyond just attack speed/damage/health of enemies, the primary mechanical differences between Brutal/Gravewalker and the lower difficulties is that enemy nemesis missions will only start with tick of time before completion (as opposed to three), and worms will throw stun bombs to cover their escape like tricksters. You're not really "missing out" as such. And, as mentioned, you can change at any time with no issues.
(if you pick the perk that gives 2 last chances you get a single last chance so it isnt too annoying)
