Creative license? Add visual interest to the game?

She is not a human, She's one of the Great Spiders, a Primordial race just like the Wizards are. Immortal by time. Magic causes her to shift into a human form. But the spider is her true form. Just like Hilary Clinton's is a Wrinkly leather Prada Bag.

Ungoliant the mother of Shelob was a primordial and she TOOK the shape of a spider, we can assume many things from there

I'm guessing you only know Shelob from the movies.
In the books, Shelob wasn't originally portrayed as JUST being a spider. She's ALWAYS had this air of there being something more to her - Shelob isn't even her real name, it's just a name the orcs gave her. Her real name is Ungoliant. It's heavily implied that she's some kind of demi god, much like the Balrogs.
Actually, a lot of the stuff in-game Shelob rambles on about, about how old she is and how she comes from darkness to consume light etc - that's pulled almost straight from the books. That's how she's described. The Shadow team has actually been pretty good at keeping the lore semi accurate, while still managing to take some creative license.

Remember, she's a legendary monster of divine ancestry. Not just a giant bug.

In the books, Ungoliant is the mother of Shelob. Ungoliant eventually devoured herself due to her insatiable hunger.

While I agree that Ungoliant is demigod-like in powers, I wouldn't say that Shelob is. It took a host of balrogs to beat back Ungoliant when she attacked Melkor (a Valar). Sam beat Shelob. :)

[Edit]: To answer the OP: as others have said, creative license.[/edit]

Maybe Shelob just happen to rolled a natural 1 in that fight?

But yeah, I think this is creative license. Same goes for Celebrimbor: originally he only create 3 rings for the elves as he doesn't trust Sauron, and he never steal the one ring to create an army to oppose Sauron (though he did eventually get captured and tortured to death for not revealing the locations of the 3 rings he created). Or at least that's what I heard, someone correct me if I'm wrong.

Not quite. Shelob beat Shelob in that encounter her own force and rage against Sam drove Sting (I think it was Sting it could have been one of the blades the hobbits got from the barrow in book one) deep enough to cause her to retreat. Sam did not even cause her that much harm on his own.

So you're saying she pretty much rolled a natural 1 in that fight.

Tomato, tomahto. :)

And Sam cut off one of her 8 feet/claws!!!!

The point is that I don't see someone who threatened a Valar (Melkor) and required a host of balrogs to chase her off as being bothered by a hobbit. Even one with an elven sword and Galadriel's light. Ungoliant <> Shelob.

Cause she's been in hiding for over 50 years, and turnt feral. Sam might have poked her with something else if she was in her human form.

I will not argue that he hurt her just the wound that made her retreat she to some extent caused herself. Edit I forgot about the claw my bad.
