Based off who we make, dictates what kind of captains we could recruit. If you make a man, you recruit men. If you make an Orc you can recruit fellow orcs.
Use Baranor as a sort of template, with the grapple and whatnot. Goal would be, fighting for Gondor and pushing the forces of Mordor back, or as the Orcs, bring the lands of Gondor under your banner.
The story would be simple. If you are a Human, you're duty is to simply defend Gondor against the might of Mordor, reclaiming occupied territory, defending it, etc.
If you are an Orc, you're job is to conquer Gondor.
DLC could perhaps be expansions to the Map, to include Rohan, Dale, perhaps even Mirkwood and the Iron Hills. Each expansion adding new territory, but also the race of people that occupy them, with unique armor and combat styles.
Ex. Rohan would be cavalry focused, so you can expect them to favor battles out in the field so that they can try and out-flank you.
Gondorians would have an emphasis on infantry, they would favor getting up close and personal.
But that depends on...like, how "big" they'd intend to make it. I feel like the way they have it set up now, that it is pretty fun.
They could also provide a sort of "PvP" element. Not in the sense that players would actively be fighting eachother in battles(that'd be sweet, but, hard to implement in this style of game), but in a world war type of deal, kind of like in For Honor. The more Victories won by Orcs in Osgiliath, give the Orcs a type of extra reward for fighting there or something.
I don't think people play these games consider it to be canon. I certainly don't, but that doesn't make the game not fun.
