Sounds like you have a passive one, good pit fighters are super agressive and usually have health boost from attacks and super strong. Look for an epic feral berserker with thick skinned, charge, rabid, and other fun stuff, enraged when others get enraged is fun too. He'll give you plenty of beatdowns to watch.
I've had level 15's smoke level 45's in 3 hits, level isn't that big a deal.

Also, in pit fights, only x amount of AI can attack one target at once. So, you'll often find your Captain (with a gang), just standing around while his grunts attack.
That's why you gotta make sure to Alt-F4 just before or just as your guy dies, it's cheap but it will save your orcs when the fight is obviously unfairly stacked against you.
Sometimes they get out of sync with their grab attack and missing, but they generally are pretty consistent.
