If I uncheck both DLC on my game, will it somehow corrupt my save? What will happen to those Slaughter/Outlaw captains that are already in my game?

1 of 2 things may happen
1: You untick the DLC and said Orcs are removed from your Army
2: You untick the DLC and you keep said Orcs but you will be unable to get any new ones until its re-enabled.
If you havent done this yet, id back up your save first just in case.

As soon as I'll try unticking the DLC, I'll tell you the outcome.
Well, after backing up my safe file and unticking both DLC tribes, the captains (of those tribes) on the army screen of all fortresses remain in my game but Outlaw/Slaughter missions no longer appear in the map, so it looks like you were right with your second option ;)
