Fatal Might?
So there's a perk called fatal might which basically turns the might meter into what it was last game - fills up fast but resets on any damage. I'm unsure if this perk is able to be disabled, so I gotta know - is it worth it? Or should I stick with the basic method of gaining might in this game?

You can disable any perk you have at any time.
And you can only have 1 Active at any given time (which on some skills feels kinda dumb)

No real harm in trying it. I was so conservative with my points that I have about 20+ Not spend in Act4

As long as you have 1 Point in every Major Skill you will be fine.

For the love of sanity get the auto collect Skill ASAP

You can disable the perks: highlight the one you want to toggle and check the button prompt.

That being said, I thought I'd absolutely love this upgrade - but I use grim resolve the most now. I discovered that I enjoy keeping the might bar stocked (especially with the +might upgrade for brutalize), and the timer for being out of combat is fairly strict.

As you pointed out, it effectively turns the might bar into the first game (pretty sure it's ~x8 per bar with fatal might), so it's a matter of preference/playstyle.
