Humans can't brand their enemies and bend them to their will and see the thoughts of their enemies so Talion without his Wraith powers and being immortal would not work in the game at all.
I was one of the few that disagreed SoM was like AC 2 but you will just be litterally playing a less polished parkour Assassin's Creed without the Wraith powers. Replace city guards and Templars with Orcs and War Chiefs.
If the was maybe a linear part to the story where for a brief time you took control of a solider or guard when one of the cities is under siege that would be cool. But I wouldn't want to play the entire game being human. Jumping from incrediable heights and that attack where calabribore kills a load of Orcs all at once is bad ass.
