Stuck in HOTAS mode

I can't return to default no matter what I try.

Well that sucks! Try pressing "H" on the keyboard. That should toggle HOTAS support. The controller model might not appear until you load the next level.

I have an update almost ready to roll out that lets you choose which device you want to use instead of auto-detecting.

I figured it out, I had enabled "support configuration for generic gamepad" in the Steam Big Picture mode and I suppose there was a conflict in the code, when I changed my view to 3rd person it would show the game pad, but it would show incorrect bindings no matter what config I chose. Really weird but I fixed it, thank you for the response!
