Is there any way to add keyboard buttons on screen?

When customizing the controls I can't seem to place specific keyboard inputs, only controller inputs - which not every game supports.

Also, is there any way to manually switch from mouse to controller mode? It seems to force my hand.

The buttons that show up in the Steam Link app correspond to the buttons that have been assigned through the Controller Configuration in the Steam Overlay/Big Picture Mode. For lots of games, the gamepad template is loaded by default, which means gamepad buttons are the ones that show up in the Steam Link app.

If you want keyboard keys, you'll want go into the Controller Configuration by accessing it in the Steam Overlay while playing and assign keyboard keys there.
