My ISP supplied/branded Router was blocking the data from Headset to PC and I had to open the Ports. I opened them for both my PC and the Quest Pro to be double sure.
Also the Loopback IP wasn't working for me (127.0.0.1) I had to use my computer's actual LAN IP. (192.168.0.2 etc)
I was originally using Virtual Desktop to skip all these issues but Steam Link just has less streaming issues..
Also the Disable Quest Controller Scripts work with Steam Link were as they don't on Virtual Desktop.
Quest Link is just far too much work on the PC side when Steam Link and Virtual Desktop just works, SteamVR and Quest App constantly fight for the OpenXR protocol and if you don't make sure the Quest App is set to Quest by default, none of it works at all and you need to close everything, set it default in the Quest App then reconnect everything.
Anyway TL:DR, Had to PortForward on Lan and use Lan IP in VRCFT..
