Resolution in games gets squashed horizontally
I've seen a few people with an overscan issue where their picture gets stretched beyond the borders of their TV. Mine is sort of the opposite:

My PC graphics (and monitor) are set to 1920x1200 resolution.

My TV supports FHD 1080p.

Steam Link is set to use the best it can (up to 1080p)

The steam link UI and the Big Picture UI all work full screen on the TV, edge to edge, 1080p. Lovely.

However whenever I launch a game, any game, even non-steam games, the resolution squashes horizontally (doesn't cut off the sides, actually squashes the picture), to something like 1724x1080 (rocket league) or 1765x1080 (project cars).

Also, I find the white mouse cursor from Windows stays on the screen when launching any game and stays there throughout, depending on wherever on the screen it was sitting on the PC. I cannot move it using the controller and it never goes away :(

I have that happen. Sadly you have to ensure the games settings are set to 1920x1080 rather than it just figure it out.
Easy enough in most games but I found in Binding of Issac, it just picks the monitor res over the streaming instructions.

I'm running a 3440x1440 monitor on my streaming host, and the fact that some games are using the host monitor resolution instead of the TV resolution is a real problem, creating terrible aspect ratio problems.

There is an option in the settings for steam link display to adjust the picture. It was off the screen on my TV and adjusting it there did the trick for me.

I wish you could have game settings that apply in big picture separated from desktop settings. Like 1440p for desktop and 1080p when streaming

I just got my Steam Link on Friday and ran into the same resolution issues.
My PC runs with 16:10 by 1080x1200 so on my TV screen all the games appeared with 1724x1080 - that was really annoying since everything else is really awesome about this machine.

How I fixed it temporarily:
-Set my PC/HOST to 1080p
-Set the game I want to play to 1080p
-> Et Voilà! ;)

It is not very comfortable to switch all the games resolutions back and forth manually, but since it works I can accept that for now.

For the future Valve should implement a feature that allows us to configure and bind games to the remote-screen/TV screen resolution. Or maybe they introduce templates, like:
-> Run this game on host (host resolution applies)
-> Run this game on remote (remote resolution applies)

Aside from that issue, I am very happy with the Steam Link and I think 50 bucks is a very fair price.

Hope the above hint helps.

Over a year later, this is still an issue. Link Bonkers, my monitor is 3440x1440, which puts so much letterboxing on the TV that I can barely see anything
