Does your TV offer a mode where it "auto adjusts" to a 21:9 image letterboxed within a 16:9 signal?
For example, when you watch 2.35:1 or 2.40:1 movies, do they get "zoomed in" to fill the TV correctly without stretching or distortion?
If so, set your games to a 21:9 aspect ratio (such as 2560x1080 or 1920x810) and use that mode. The TV should then think the game is a letterboxed "movie" and have it fill your TV nicely.

As for the image being cut-off during normal operation, I don't why that would be happening in a "stretched" TV mode, as that should just take the signal and distort it horizontally without messing with the vertical. Make sure you aren't actually in some slightly "zoomed" mode, or "cimema," or anything else that crops the image.
Think of it: Lets say i have a tv signal of 1920x1080 pixels. What i actually see is a 1920x800 pixels. The other 280 pixels are out of my border. This happens for any signal i have (home cinema, video in, raspberry pi etc). It is just the way my tv works and i am get used to it.
So by using "super zoom" option i get this problem. By using the "4:3" option i do not have up and down "cut" pixels, but i get big black bars (left and right).
On the other hand i can not set my games to a 21:9 aspect ratio (such as 1920x810) as my games have only pre-defined resolutions. The only workaround for my case could be by valve's team: They could introduce a really 21:9 aspect ratio format or importing an option for video calibration where the user can **manually** edit EVERY corner of the picture to match EXACTLY the image on the display.
Try visiting The Widescreen Gaming Forums Master Games List[www.wsgf.org] to see if there are options for your individual games. Many games can have resolutions forced on them as long as they are in Windowed or Borderless Window mode.
Source-engine games, for example, can force a resolution with command line options. Rocket League can have its settings file edited manually, and so on.
Beyond that, you will likely need to change your mode every time you use the Link. Does your TV remember modes separately for each input? It's possible your settings for the Link's input won't affect your other devices.
