Xbox One S controller audio jack
Is there any chance I can get sound from the audio jack in the controller?

No controller attachments are supported via Bluetooth, per Microsoft: https://support.xbox.com/en-GB/xbox-on-windows/accessories/connect-and-troubleshoot-xbox-one-bluetooth-issues-windows-10

But I use it wired. Is there any chance this way?

On Windows directly, yes, via the Steam Link, no. Though if you're willing to pay for VirtualHere you should be able to make the controller act as if it's connected directly to your PC.

or you can use a standard bt headset on the link

Okay. And what happens when you put the original Dongle in your Steam Link Usb port? Does then the sound work?

only with virtualhere, so the link forwards the usb port to the host pc
