Eventually, if you plan on getting 100%, you'll need to customize a small/medium dinosaur and give it a T. rex or Indominus rex head, because it's the only way you'll be able to roar at amber deposits to shatter them. Took me a while and some searching to figure this out. Some of the spawn pads won't let you spawn in a full T. rex or Indominus, because the area is too small, so don't fret. Also, I think there is one pad where you can spawn in large dinosaurs, but not a Brachiosaurus, because it's just too ridiculously big. Just a warning, no need to worry if that happens.
The only time you can play as the Mosasaurus is in it's arena. You'll have to head south in Jurassic World over to where the big Mosasaurus arena is, and there will be a door that lets you access the tank and swim as a Mosasaurus. Same thing goes with flying dinos, you can only fly them in special places like the bird cage in JPIII. I forget if these doors are unlocked right from the beginning of the game or not... I think so, but you if you want to check, you should see a couple of doors marked on the map in Jurassic World (T. rex paddock, mosasaurus arena, that bird dome thing).
The only way to spawn in vehicles is to find one of those grey pads. Threre's one on the path to the original Jurassic Park if you start walking toward the visitors center.
