Quiplash is 3 players minimum. You can't play with only 2 players.

No, you need three players or more up to eight players

If you really want to do it, you can join as a "third player" with another device, and then leave. That works for me in drawful, though I never tried it in this game.
However, playing with only one friend doesn't make any sense since with only 2 players there's no one to vote the best answer.
