How to deal with Poison Ivy's plant pods

Some of those pods don't release a floating ball, so I am able to run up to them and hold Space to destroy them. But some pods release a ball no matter what, and the ball hits Batman, so Batman's health is diminished.
After a while all the balls add up, and Batman has lost half his health.

How do I deal with these plants?

First off, don't run up to the plants as they'll key on movement on Normal and Hard play settings. The faster you approach, the faster they shoot; you're just making yourself a target. Crouch walk up to them or glide directly to them in openworld if elevation allows before destroying them.

Her spores are targetable. When a plant pod releases a spore, hit them with Batarangs.

Her plants get more defensive as that mission nears completion. Depending on your difficulty setting and progress, her plants will shoot as many as 3 spores at once. Have your multi-Batarang equipped and ready to deploy to neutralize up to 3 spores simultaneously.

Around which percentage of completion of the game is Poison Ivy beaten?

I'd say around 80 or 90% of main game, I'd have to load a save to be certain.
