If gameplay, many people have been doing it since 2015/2016, I think, but if you want to do so, I can't stop you. Not even anyone. Go ahead and do the gameplay uploads. It's a videogame showcasing gameplay anyway, so... you won't get copyright claim or strike unless you use copyrighted music in your editing (which so far in-game music don't make you have such thing). I also made some gameplay videos with some mods in and... yeah, they're fine as it is.
TL;DR: you won't get copyright claim or strike if you upload the story mode gameplay because many people have been doing this and they're fine as it is.
A ton of people on youtube uses naruto storm music as a form to replace the anime ost as the game OST in the storm series so they won't get copyrighted.
But, this still could get claim as it's super easy for someone on youtube to claim your video about anything. recently some stranger copyrighted Destiny 2 music on a ton of contact creators and he also copyrighted devs who made the music as well and there video also got copyrighted because how bad youtube copyright system is. ohhh i see TY! i think im ok with copyright claim, and what about the cutscenes of the game? there's tons of cutscene like a photo slideshow in here right? will i get copyright strike on that?
I recommend check someone else's video before doing your own for reference, though as much as I concern (again), photos won't get you such strike/claim.
