If you want non-mash-friendly fighters go for either Street Fighter or Mortal Kombat, I recommend the second one because I particularly dislike double inputs as opposed to powering up, and I also prefer that combo system in general.
Also MK has no cinematics unlike SSF shadow moves and stuff. But if you really like those craps you can also go for Killer Instinct, which has a ♥♥♥♥ ton of them and a very in-depth practice mode.
Sad thing, most players don't try to play smart/experiment which allow you to create your own style and tricks, they play cheap for easy win. And even strongest players mostly relly on top characters and glitch abuses alongside with all that skill and expirience the got.
The point is, this game have a lot unobovios things to use in combat, but it's harder than spam/mash. You can beat everything, it's hard and unfair, but possible.
Every justu has a weakness (c)
No, just some "guides" on youtube, only way to learn it just have a TON of expirience and experimenting, what will be hard cos game kinda dead. Or you need an expirenced player as teacher.
