It says in the beginning of the demo that saved data will continue to be accessible on full game.

If you finish the demo and then move on to the full game you'll start right before the boss of the demo. There's an achievement for beating that boss, so that's why it makes you do that again. There isn't anything for you to unlock in the demo that you can't go back and get later, like the chests with unlock codes.
