So, try this.
Go here:
C:\Program Files (x86)\Steam\steamapps\common\SSSS
Right-click on SSSS.exe
find "properties" and then "compatibility".
Check the box where it says "run this program in compatibility mode" (or something like that), and start selecting from the previous version of Windows.
For example, if you have Windows 11, try selecting the option to run the file in Windows 10 compatibility mode. Then launch SSSS.exe (not the SSSS shortcut file located on the desktop). If it doesn't work, re-do the same thing, only select compatibility with Windows 8. Then Windows 7.

If your computer is a laptop, verify what GPU is assigned to the game:
WINDOWS settings → system and display settings → graphics settings → select "desktop app" → browse → locate SAINT SEIYA game EXE file. Its name is SSSS.EXE and usually it is located in C:\Program Files (x86)\Steam\steamapps\common\SSSS
Click ADD button, then find the game in the list, click on it, and select the "high performance" option.

mmm... The Galaxy Book 3 Pro doesn't have a discrete GPU chip. It only has the integrated graphics chip.
Normally, this was a deal breaker to run 3D games on laptops, in the past. However, Saint Seiya Soldiers' Soul is a very old game, and the integrated graphics chip of your laptop is an Intel Iris Xe, which is one of the most modern and performing ones.
Theoretically, considering only the mere 'brute force' of your graphics chip, it should be able to handle the 3D graphics of this game.
However, there's not only brute force. There's also compatibility.
Your graphics chip is recent, and only recently (last 2 years approx.) Intel decided to become the 3rd player in the graphics cards market.
My guess would be that yours is a compatibility issue between the game and your graphics chip drivers.
If you navigate in this folder on your hard drive:
C:\Users\dddddddddd\AppData\Local\BANDAI NAMCO Entertainment\Saint Seiya Soldiers' Soul
replacing "ddddddddd" with your Windows user account folder name, you can right-click on the config.ini file and select "edit".
Then, at some point, you'll find a section saying something similar to this:
