you could take a look at a few i know, there may be more out there than i do know, most games generally come in 2 even if its a bit obscure, i remember the time i was making a game, and suddenly out of nowhere that same game(like a evil more better looking twin) made by someone else came out i don't resent them for it but it would have been nice to be the one to have made that game, and in the end they would have done a better job, well in any case here's a few picks of games i played that look like spaz and beyond sol, of-course no game is truly a copy of another, patents and copyright will make sure of that, and unlike totalbiscut i have not looked/played at every game on steam...
also i recommend that you lookup lets-plays, look at the length of them, and restrict yourself to the first 2~3 episodes if you look into it, that can help you not to spend your time in games that are too mighty in complexity or too lean on relative fun...

rebel galaxy(its allot like beyond sol but without the strategy and more about being a lone rouge)
you could also take a look at these but they are more heavier on rts genra(like you disliked in Stellaris although that one is especially heavy on management and deep depth of detailed things);
stardrive(1 & 2, one has the better ship gameplay if you ask me, but its abandoned)

these are based on the combination of the two you said, if you liked terraria(yes i looked at your profile) you could also take a look at starbound...
It sounds like you want more simple games with trading, mining, and a lot of combat action. I have never played Beyond Sol or SPAZ, but I would highly recommend Rebel Galaxy, it's a fantastic and beautiful game with lots of action, one of my favorite games on Steam.
Stellaris, it's more of a 4X RTS, pausable in this case. I'm actually thinking of buying it, but it you don't like really complex 4X strategy style games that focus more on empire building than combat, then you would hate it.
Speaking of Beyond Sol, I'm looking at grabbing this one on sale, looks like fun.
I have that one too and would recommend it, depending. It's a gorgeous game, but there's not much to do right now.
Basically Beyond Sol is the 'arcade version' of Drox with added base building. So you spend your time trading, doing missions and manipulating the empires in the galaxy, but not building your own empire.
So Drox is waaaay more complex and more detailed, in many ways, with more options. You play as a space mercenary who's goal is basically to manipulate the empires in the galaxy to do what every you want them to and get rich.
It has all the same elements in Beyond Sol (mission, trading, combat, I think you can even have your own fleets) except base building, they are just more complex and detailed.
For example the ship you start with is one of 10 starting ships (one from each race) each of which has a various number of light, medium and heavy slots and racial bonus. Only certain equipment will fit into each slot and you have balance power usage and weight (heavy ships have reduced thrust). Run out of power and you'll need to equip a better reactor or maybe add some solar panels!
You have a character, that has skills and a level, equipment has min lvl and skill requirements.
And each ship can be upgraded i think about 5 times... and that's to a bigger version of the ship, ie it doesn't look the same!
The control scheme (flying and fighting) is very similar (but with options mouse|WASD|game pad), but with 10 skill slots... and you can stack skills on the right click, that you scroll through with the scroll wheel (is you choose that option). And everything is rebindable!

No coop...blah
If you buy SPAZ 2 expecting SPAZ 2.0 you'll probably be disapointed. It's generic 3rd person space shooter 101 with rather simple resource gathering system, mothership assembly system and tiny bit of RPG thrown to the mix. That's the impression I get from watching LP videos and forum discussion.
Do bear in mind that it's very early access and more content will probably be added over the course of EA and almost everything is subject to change but, as is, it seems rather shallow and oversimplified. I recommend waiting till first few content updates are out to see what direction the devs will take it.
