you can change the difficulty level in the Character Sheet of your opponent in the Training Club.
Look for the "Level" and "SubLevel" in this picture :

Note: if you do a full career, it's very unlikely you won't change the difficulty level in the middle, as tennis is a game of balance and once you progress things tend to get too easy, at least till the point where you reach your own maximum... :)
- on normal, then pick Junior-10
- on hard -> Pro-10
- on very hard -> Master-10
