How do you think a Ryzen 7 260 will hold up for playing EU5 over the next 5 years?
I'm a regular Paradox player, so I'm already used to the engine and I really don't mind some slowdown in the late game.

Acceptable but not likely to be exceptional, especially late game.

If it's specific for this game and it's a Ryzen mobile CPU you're after then push towards one of the Ryzen 9s, otherwise it's just okay.
The CPU model itself does not matter that much, you also need proper cooling (specially if it is a laptop) and enough memory to support it. If you are using iGPU from R7 260 you obviously need to turn off 3D map and extra models (birds, smoke, sheep etc) but it still uses system memory so you want at least 32 GB of it (which costs about 1000 EUR by 2027).

I do not think EU5 will become much more demanding game within next 5 years. It already is, and terrible perfomance is one of main complaints from players.

The laptop I want to buy would have a Ryzen 7 260, 32GB RAM, and an RTX 5060 8 VRAM.
Yeah, should be ok.
