I like shadowhawks. The 2K was my first one. Used medium lasers and SRMs on it. The 2H is good with triple RACs too. They have .ore build options but those are my preferred ones. RACs are probably more beginner friendly than the 2K.
Heavies are probably easiest to play. Maybe try a Marauder 3R, Warhammers are quite good, Maybe a hellbringer or a quickdraw 5K.

1. Shadow Hawk 2K - all weapons mounts are cockpit-level, reasonably durable with a light engine (LFE 265 and LFE 280 are the sweet spots) and can run either as a laser boat (3x Large Pulse Lasers), MRM + laser hybrid (MRM 40 + 3x Med Lasers) or a brawler (3x SRM6 + 3 Med Lasers). The cockpit is an issue with some players, but I'm not bothered by it.
2. Huntsman - Any variant, but the Prime probably needs the least amount of omnipod modification needed for useful builds, like 6x Medium Pulse Lasers. The best brawling build sadly requires the Hero torsos
3. Vapor Eagle (VGL 1, 3, A) - One of the best medium mechs in the game. Can carry ridiculous firepower with enough speed and mobility.
4. Bushwacker P2, X1 - can run dual LB-10x, which are pretty beginner-friendly weapons.
5. Griffin 2N - ECM protects you from sensor pings and LRM locks at long-mid range (pretty significant when fighting inexperienced players, but not so much vs vets), reasonably durable, but can only run missile builds (and it runs SRMs better than MRMs).
6. Hellbringer - any CT, but the Prime LT and A head are must-haves. And yes, this is probably the best laser boat for beginners.
7. Warhammer 6R - versatile, but also somewhat of a priority target. Also runs the dual LB-10x build well, with supporting med lasers.
8. Warhammer 6D - pretty much the equivalent of the HBR laser boat, except without ECM and with less build variety
10. Nova (S CT for the ability to carry triple AMS)
11. Hunchback IIC -A - another great laser carrier, but it has HUGE torso hitboxes.
12. Ebon Janguar - A Variant has the least amount of ominipod modification needed for useful builds. But be warned, the EBJ has very wide arms which makes hitting things at close range an issue.
13. Vulcan 5T – quick, agile, with simple weapon set-ups (meta is 5 MPL, but short-range brawling may not be good for new pilots). Needs a big XL engine (XL 300) to fully bring out its potential. IS XL engines are not really newbie-friendly.

There is no "best first mech", but there is a best first mech for you. The way you can find out what the best frist mech for you is:
Play all Trial mechs on offer.. all 16 of them, see which weight classes and weapon systems you like and don't like... then ask on the forums with these details listed.
Do you like fast mechs or slow ones? Ballistic Weapons or Missiles? Do you like Energy? Play all the trial mechs and you'll get a good idea what you like and dislike.
Hellbringer as well... omnimech with ECM possible.
