Report a translation problem
Since that time, I found out more about it. They had no issues with using Sonia (as Sega owns all the characters from the TV Shows, including Sonia).
But, the picture they used was a fanart, made by someone on DeviantArt. This game's producers thought it was official art (as it was VERY nicely drawn), and so they used it.
By the time they found out the truth, the game was already out, so they had to scramble to get the artist's permission, and get a lot of legal documentation signed.
So I guess they decided to remove it in this Steam version.

It was on that one casino stage, where you drive along a curve and see the Sonic cast as cards on the road. They had Sonic as the King, Sonia as the Queen, and so on.
They've now replaced Sonia with Amy on the card.
A shame, it was nice to see Sonia get some time in the spotlight, but I can understand why Sega would want to remove possible legal issues.
I played the level (Roulette Road) and found it!
While they did replace her with Amy on the cards in the background, Sonia is still on the cards painted on the road itself.
