Poland didn't existed at this time. By the beginning of the game, it had already been partitioned by three great powers (Russia, Prussia, and Austria-Hungary), so they're not available to play as. Plus, the grand campaign is only really focused on Napoleonic France and the major coalition players, so smaller factions like Sweden are unplayable anyway. Historically, it was revived for a short period of time as a client state for Napoleon, but that would be a couple years later.
