i installed that months ago and it always crashes everytime i launch it

What mod would you recommend for single player battles (not campaign), in terms of adding more factions, units, maps? From what I've seen the 2 best seem to be DarthMod and LME

Its a really good base to work with IMO. I have cannibalised about a dozen small mods & unit packs to flesh it out more. Instead of just 2 factions with very large rosters I now have 8 witha very crude AOR & all can be as strong as France and England given time.

Personally I use DarthMod most of the time. But there are others that change things up quite a bit more. As someone mentioned above La Montee de l'Empire is an excellent mod.

I tried to install La Montee de l'Empire 4 over the top of Darthmod. I got some parts of it (Artwork, some of the effects), but NOT the new tech or new units. Should I have deleted Darthmod first?

Yes also look at sub mods for it. Using NTW3 SP only for me.
