Regarding the path taken by your troops, though it is stupid, that was probably the fastest most direct path towards your enemy. You must micromanage your troops inside the walls in order to prevent all these stuff from happening.
And above all things, stay as far away as possible from friendly AI, way deadlier than the enemy!
So, you just have to be aware of which stairs are safe and which ones are not. When a valuable unit is near a damaged wall, you might want to switch it with fencibles or militia, and just be sure to move the unit to the back walls, so they descend through an undamaged stairs.
I guess this depends on how do you like to play, but I kind of like long lasting sieges. With NTW3 I have played 2 or 3 hours long sieges, with artillery preparation, several sides attacked at the same time, defending breaches in the walls and even fighting for the barracks and inner defenses
At a game's level, that is stupid. But I just like to play battles as "realistic" as possible, that is why I try to avoid exploiting mechanics that wouldn't be available in the actual field of battle. But I shall add that I do not play nor never have played competitive battles, I'm just a history freak, so my gameplay and tactics are way worse than those of ranked players.
