Have you done tutorials ?
For dunks you gotta block early in teh dunk animation, if u wait you wont get the block (ping probably matters here, I say probably because I'm not one of the developers so not 100% sure). You have to be close to the player when he starts the animation too, if u wait under the net and he does a long dunk you probably aren't going to block it.
All in all, blocking these shots ends up being a gamble where you gotta pick whether you want to block a manual layup on the far side or dunk.
If your ping is over 50, then eventually you will need to change position to be competitive.
