Personally I rarely use them. Most planks I leave behind.
In the beginning, I went around barricading areas around the safe house, spending time strategically thinking where to block them for a while (after the first zombie attack). When I came back to the game, all barricades were gone.
As far as rest of the game is concerned, I have even cleared Tower of London and so far, not a single use of the barricade is needed (mostly cause if some zombies bursts through, just shoot it).
I mean the games pre-barricaded doors are there just to extend playtime or for those pointless "scary" moments when zombies are trying to break through.. only when they do, it's like 2-3 zombies and you have a good laugh while you go around beating them to death.
So yeah, don't bother picking up planks. Pick up ammo.
