All of those goods take 1 cargo space per item as opposed to things like fish or grain that take 10 cargo spaces per item. On normal difficulty you can buy beer for 33-40 per unit and sell it for between 50-75 per unit giving a profit of ~26 per unit. Profit on Irons goods is ~75 per unit and profit on wine and cloth is ~100 per unit.
Iron goods are produced through out the Hanse but mostly in the west. Beer is produced through out the Hanse but mostly in the center. Cloth is produced through out the Hanse but mainly in the west. Wine is problematic. The only 2 cities that produce it in the Hasne are Groningen and Cologne. Groningen produces it in low quantities at a higher price but is accessible by all classes of ships. Cologne produces it in high quantities and at good prices but is only accessible by crayers and snaikkas without using an exploit.
The thing that you make the most money on is skins (~450 per unit) but the demand is very low. Skins are mostly produced in the north east At the beginning of the game Stockholm for example only has a demand of 12 skins per week. Skins also have a high base price meaning that you need quite a bit of capital built up before you can buy and sell enough skins to really make a profit off of it.
With all that in mind I try to set up my hubs where the goods that I'm going to be collecting and trading are. Reval produces both iron goods and skins so it is a natural hub for the east. Luebeck is centrally located and also produces iron goods so its a good place for a hub. In the West either London or Bruges for access to the Med, to take wine from Cologne and to pick up cloth and iron goods from the west and to serve as your distribution hub for skins from the east.
I tend to like my trade routes to cover fewer cities so I set up a beer hub in Gdansk and a beer hub in Bremen. I think of iron goods as my starting product and I try to set up my west, east and central hubs first and then the others as I can.
