Dude, what you do is use your !@#$ing will. Write down who you jailed, and if you die to SK they will go for the person you jailed!
Nowhere did it say 'Oh, if you jail the SK, he'll totally ♥♥♥♥ your sphincter with a rusty shiv. Also, no one knows who you jail, so WRITE IT DOWN!'
But if you chose to execute him, you wont be killed by the SK.
IE always update your will with who you jailed before the night ends, always. Then the next day if you do die to the SK, 9/10 towns (admitted in classic maybe less, as most are still learning the mechanics, but usually at least one person in the game knows it), The town see's that, puts 2 and 2 together and assumes whoever was jailed last is probably the serial killer, thus bringing him down with you. As town outnumbers evils considerably, a 1:1 trade of a townie for an evil, is a gain for town.
Something also to note, this also applies to werewolves. (ww's will kill you, if you jail them on a full moon and don't execute them).
Jailor is a role like many others, that can be the most powerful force for town, but also could go down due to bad luck on night 1. I've experienced no shortage of games as jailor where I single handedly plowed through evil back to back, killing a GF day 2, mafioso day 3, SK day 4.
Also had games in which I jailed an actual doctor n1, happened to be killed by an SK, then had to watch in horror as the town lynched the doctor that I knew wasn't an sk, but they all assumed he was due to the bad coincidence.
Anyway don't let one bad experience make you turned off to the game, I'd reccomend playing more games, learning the mechanics, every role has it's stregnths and weaknesses (well except disguiser, disguiser sucks, but it is soon going to be buffed from rediculously bad, to only very bad)

Serial Killers night activity is: Choose someone to kill.
Serial Killers night ability is: Kill the person, who blocks your Night Activity.
Serial Killer can kill 2 Escorts in 1 night, if both Roleblock them.
This is the exact mechanic, if you need to complain about that.
I tried to write a Guide about all thoose Mechanics and I lost my Patience, after I wrote the Disguiser. You cannot even imagine the amount of things, that happen in this game.
