Different bosses have different patterns. Many are Waywalkers. This means they can move fast and also they are able to destroy the ground beneath a unit's feat, killing them. They also have some additional special abilities such as the hawk or bear transformation. Finally, most "bosses" must be killed multiple times -- they re-spawn elsewhere on the board, often destroying your next most valuable piece and/or destroying everything with an area effect around them.
There are basic strategies to deal with each of these problems. One is to create platforms and stand on them, making those pieces immune from the boss ground-destroy attack. Another is to not attack the boss at all in the early game, as its counter will wipe you out -- instead, avoid the boss and focus on hoarding land and destroying the boss helpers. Then, when you have a lot of units, crowd the boss in and attack it multiple times in a single turn. You can also place your pieces strategically -- for example, place two archers so they can shoot each other, than attack the boss with a third piece. The boss re-spawns on one of your archers, and you immediately shoot the boss with the other. Et cetera.
