No more than 9 blocks high if you are a good engineer.

In creative I can do better by adding Voxel pillars hidden inside the castle walls :fix:

You can also build around a hill to give the perception that the castle is larger.

use cruciform shaped, not just big flat surfaces. Arches, buttresses, more arches...spread the weight as wide as possible...there are a few engineering tricks you can use...but the higher you go, the more you have to support. You can use a shovel instead of Voxel hands in survival, I always have too much dirt anyways and the nights are dark and long, may aswell spend a while walking round your perimiter piling dirt...
Top tip: build arches. As many as you can fit in with your design/space. They dont need to be the fat blocks, either.

Liberal use of the small blocks to replace things like stairs and floors that dont add to the structural integrity of the overall structure.
