Aiming for Specific body parts
This may sound odd, but seeing as we can dismember and be dismembered, i think it would be a pretty handy thing (though maybe too much so) to be able to choose where to strike -
Like Dwarf Fortress Adventure mode, aim for the hand with a slash weapon and theres a chance to cut off the hand etc.

I get that ti could be abused, by ramping up whichever stat you use and just cutting off hands but I feel it'd make the game less random in the sense we would be actively trying to behead or "de-leg" a fast moving enemy, or remove the arms from a particularly savage being.
Good for story aspects too I guess if both player and foe are aiming -
Picture it - surrounded by Goat men, slicing off horns and hooves, but one strikes from behind, severing your shield arm, you stagger round and meet out a swing worthy of song, removing the goat mans crazed, bleeting head.

I get that it would be a complex system to program, but I just guess it would be cool seeing as we already have the "part" system on the body, many a time I've lost my face and limbs to a madpole and have sighes in frustration as I try to cut off its own face and force it to let go but couldn't actually hit its face.

^ If this is added, being able to see which items are in which hands for enemies would be useful, as well (so you can try to disarm the "dominant weapon" hand of an enemy).
