Good mods for a newbie?
I'm new to this game and am wondering if there are any mods out there that can make learning this game just a tad bit easier? Or just generally improve the game without drastically changing it.

Nope. Base game is fine.

Won't be any easier to learn with mods.

CHOO CHOO is more or less right. But, if you want to explore the game rather than learn to play/become good at it (which, let's be honest, not everyone cares about at all), you could use a cheat mod, or you could just the in-game wish console.

As for content mods, I think you'd do best to avoid them until you've found something you don't like about the base game and a mod that fixes them. At least during pre-release the base game is going to have bugs enough of its own, and change so rapidly that content mods get broken often even if they once worked perfectly.

The Chesthole tile set is worth checking out, but it is not immune to the problems I outline above...
there's a debug setting for saving games and even one to avoid death.

try turning them on and then after a while just rely on saved games once you have the hang of things.

Agreed. there are debug options in the base game that allow you to pretend like death isn't even a possibility. You're best off learning the ins and outs of the game before you start experimenting with mods.
