Warrior Within introduced the dual-weapon combat (excellent) and some new movement and fighting mechanics. In these two areas, Warrior Within beats all the other PoP games. However, I found the stylistic change unwarrented and did not really enjoy the Island of Time as much as other locations.
The Two Thrones introduces yet more movement and fighting mechanics, as well as QTE battles and charriot races. I found the story to be close to the Sands of Time, with a fairly interesting environment. However, I found the QTE battles to be lack-luster and the charriot races to be a pointless addition. The dynamic of playing as both the normal and dark prince is really quite enjoyable.
Prince of Persia 2008 is absolutely gorgeous. The story is really interesting, the world is large and varied, and the music is excellent. However, the fluid combat has been replaced with an almost turn-based feeling combat. The movement feels incredibly on-rails compared to the earlier PoP games and isn't very enjoyable.
Prince of Persia: The Forgotten Sands returns to a mixture of Sands of Time/Warrior Within combat and momvement, with touches of style from both. There is no dual-weapon combat, but the combat moves are really varied and fluid. There are many new powers/mechanics introduced in this game, and they're all quite fun. If the game was longer and had a better story, I'd rank it up with the Sands of Time.
In short, I don't think you can go wrong with any of the PoP games.
Played them all, this one is the one that stayed with me the most. This is the only game I truly became attached to the characters.
If you want to play a more difficult one. My secret love is warrior within. I love the metal music, the combat, the scantily clad women. Very different tone from the other games, and it has the best combat.
I just have to add that I've never played the 2008 PoP and I've only tried Forgotten Sands but I'm looking forward to buy them both.

Two thrones is the only one I didnt like. The other 4 I really loved.
I love PoP 2008 combat. While i do love normal action games, i love battle systems that stray from the norm. I love that it's more tactical and you have to put more thought into every attack.
Like in original Prince of Persia, where you have to mind the enemy movements before doing any attack, any mistake can be fatal.
