Well this is just my theory but, London bridge is falling down could represent the fact that the restaurant is slowly falling down (closing) because of the incidents of the missing children, and things are getting out of hand with the animatronics who are malfunctioning.... Falling down could also represent the old animatronics state of disrepair. Also the song kind of fits the game with the lyrics "Set a man to watch all night, watch all night, set a man to watch all night, my fair lady." That or children songs are usually just creepy in general.
