Try this below (source: PCGamingWiki[www.pcgamingwiki.com]):

• For Windows:
  
  1. Open File Explorer, and then browse to

     C:\Users\{username}\AppData\Roaming\Ubisoft\Assassin's Creed 2

     
     
  2. Open the Assassin2.ini configuration settings file in a text editor (e.g. Notepad).
     
     See this post if you can't find the Assassin2.ini file.
     
     
  3. Adjust the following settings as so (lines 6 and 7, underneath the "[Graphics]" section):
     

     DisplayWidth=1280
     DisplayHeight=720
     

     
     
  4. Save and close the file.
     
     
  5. Launch Assassin's Creed II and then re-adjust the resolution in game options:
