Not sure if this will work but you could try forcing a resolution of 1280 x 720 and then re-adjusting to your desired resolution in the in-game settings.

For Windows:
  1. Open File Explorer, and then browse to
    C:\Users\{username}\AppData\Roaming\Ubisoft\Assassin's Creed 2
  2. Open the Assassin2.ini configuration settings file in a text editor (e.g. Notepad).
  3. Adjust the following settings as so (lines 6 and 7, underneath the "[Graphics]" section):
    DisplayWidth=1280 DisplayHeight=720
  4. Save and close the file.
  5. Launch Assassin's Creed II and then re-adjust the resolution.

For Mac OS:

Separately there are some related fixes for Assassin's Creed Revelations too in case you wanted to see them.

It's worth saying that you have to had launched the game to at least the main menu once on your computer for the "Assassin's Creed 2" folder and "Assassin2.ini" file to be created - that might be why you can't find it.

Otherwise, it should be at that file path:
C:\Users\{username}\AppData\Roaming\Ubisoft\Assassin's Creed 2

Worth mentioning that the "AppData" folder is hidden by default on Windows, so to navigate to it you can try any of these three methods:
  1. Opening File Explorer (Windows key + E) or a Run window (Windows key + R) and entering,
    %APPDATA%
(case-insensitive, i.e. case does not matter),
in the address bar / input area and then pressing Return/Enter key to open the "C:\Users\{username}\AppData\Roaming\" folder.

  2. Opening File Explorer (Windows key + E) and showing hidden items, and then navigating as normal the the above file path.

To show hidden items in File Explorer, click the View tab in the ribbon, and then click the Hidden items checkbox under the Show/hide section to enable it.

    Alternatively, you can:
    1. Click File / Click the View tab in the ribbon.
    2. Click Change folder and search options / Options depending on what is displayed and whether you selected File or the View tab in the ribbon.
    3. Click the View tab and choose the Show hidden files, folders and drives option under Files and Folders > Hidden files and folders.

Bear in mind that this will show all hidden items in your entire folder structure in File Explorer, so you might want to change it back to default afterwards.

  3. Opening File Explorer and entering (or copy/paste) the full folder or file path as shown above and below here, making sure to replace the {username} text with your actual username - shown as a folder under "C:\Users" if you aren't sure:

    Folder path:
    C:\Users\{username}\AppData\Roaming\Ubisoft\Assassin's Creed 2

    File path:
    C:\Users\{username}\AppData\Roaming\Ubisoft\Assassin's Creed 2\Assassin2.ini
(This will open the "Assassin2.ini" file straight away in your default .ini (text) application, which is Notepad by default).
