Trouble Catching Fish

I have gotten all the upgrades including bait, and i have caught all but a few fish now. No matter how many hours i sit fishing for the 3 star fish in their depth range, i cannot catch them. Maybe i am really unlucky or is there something else im missing?

Maybe adjusting the bait weight or keeping an eye out for them and manually click? I was able to catch all the fish without adjusting weight but I was not afk the whole time
