Or wait until someone makes a mod for it.
There's nothing to mod. The only way you're getting this game in another aspect without redesigning the engine and assets is stretching it.
I've seen plenty of old games sprout widescreen support thanks to Hex edits. Heck http://www.wsgf.org/ is a great resource for 16:9 Hex hacks. The hacks do two things 1) Increase the amount of screen space and 2) Reposition the UI appropriately.
I've gotten widescreen support for dozens of old games thanks to this site. Unless that community tries and subsequently fails to get the game running in 16:9 I'm going to keep believing.
I can't verify how the widescreen is done ('cause emulation talk). It might have been a simple crop the top/bottom edges of the 3D viewport with changes to 2D boundaries for overscan (scaling 4:3 width to fill 16:9, croping excess 4:3 space from top and bottom). Or it could be a proper widescreen (4:3 screenspace preserved, and additional space rendered for the new 16:9 areas on the sides).
But the point is, it's been done on something that is more difficult to deal with (PS2), and without creating new textures or anything.
Thanks for the info. Hope someone smarter than I pokes around with the original pc releases' widescreen hex edit solution, and the console widescreen hacks and comes up with something for the this version.

I'd say it isn't outside the realm of possibility, but I'm unsure how far Gung Ho's scope on the game is. They have gone on record saying that it's something they'd consider for future games, but suggested it wouldn't be in the works for this one. Unpopular opinion: I don't see what the obsession is with needing that expanded FOV. Think of it this way; the game was designed to be played on a 4:3 screen, so all the expanded FOV would do is give you more scenery to look at. Nothing would be programmed or designed to happen in those expanded parts of the screen, so it would add almost nothing at all to the gameplay experience.
I can play with 4:3, no problem, but I just like the game to fill the whole screen without streching.
I'll wait for Grandia 1 to hit Steam before buying this.
If I've heard correctly, Grandia 1 and 2 have nothing to do with each other story wise.
