Mostly you play them as you would the mage or knight keepers, except that the Goblin King is a useless little fella. He gets no training of any kind and is pretty weak, so keep him at home writing poetry and sleeping with the matrons after you find them.
Your assault force will be composed of mostly goblin warriors and goblin archers, goblin guards are meant to be a defensive force (and prison guards) with their "added stats in home territory" trait.
As with other keepers, there's a balance between army size and quality you'll want to deal with. Making high end enchanted gear is expensive in terms of gold and materials, plus there's elixirs and such. I tend to go with a small, elite army these days and focus on maxing out their combat stats as much as possible.
Also have a question about unlocking them. I know the normal way is supposed to be capturing the king and torturing him, but last night I cleared out a goblin town as an adventurer and that seems to have somehow unlocked them for me.
