In normal mode your basic Knight keeper has 12 melee training potential, which he can obtain through training dummies. The Adventure Knight has 50 melee training potential, which he gains by killing things. These are not the same unit.
A more accurate representation though is the lack of crafting in adventure mode. You don't get to make archwood bows, or get enchantment runes. Your Hero doesn't get archery training either, so your ranged damage would just be coming from the short bow you found. I hate to be the bearer of bad news, but 10 damage isn't going to do very much... it's basically only usable against weak wildlife.
Thanks, but I can't figure out how to equip it AT ALL. I can put it in my inventory, but I don't have the option to equip it.
Why does it matter to the developer how I want to play a game - even THEIR game? Set the default to anything you like, but give us options to adjust things to our own preference!

You don't equip ranged weapons in adventure mode was the point. The only exception is if you can get the old Digrealm mod or the Adventurer Hero mod to work in 1.0, there's a Ranger hero with ranged training. Everyone else is pure melee or a spell caster.
For example, I've never seen a single developer make normal controls in my life.
Never use Z-X-V-H. Always use inventory "i" rarely Tab.
Here he also sees that the player must be limited. And he does. Optionality and QoL has never been the main goal of games in the last few years.
I agree with you and also don't pay attention to what I say. Just stating my opinion. That people can't see the simple things. And besides, in this game you can not change the interaction keys. You can not bind them conveniently. I'm surprised, but no matter how many times I try, my game memorizes the old keys and the new ones. And I can't change WASD to control the camera. In 2024 ...... I have to control the arrows key... it's ridiculous.
And about the archer. It's true. I've never been a fan of melee combat. He always loses. No tactics, no combat, you always get punched in the face. Or you wear OP gear to fight or Lose. And you can't even dodge. It's a terrible realization of the idea.
